What a thrill for us to host Yves Cuilleron (above), one of Europe’s greatest growers and winemakers, at Vino Vino last week.
The Texas wine scene is exploding these days and it’s been amazing to see world-class producers like Yves come into our market to talk about their wines.
It was really interesting to talk with Yves about “naural” winemaking, biodynamics, and organic farming.
In many ways, he is a natural winemaker: he farms without the use of chemicals and he uses only native (naturally occurring) yeast in fermentation.
But he doesn’t consider himself a “natural winemaker,” he said.
“I am a traditional winemaker,” he explained. “I make wine the same way we have always made wine” in his appellation.
