From the winemaker’s website (very cool site; check it out):

Clay-limestone soil, vines on light slopes facing full south at 150m altitude. Mourvèdre 50%, Cinsault 50%. Yields of 35 hl/ha.Harvested by hand. Traditional vinification: grapes destemmed then vinified in stainless steel tanks for two weeks. Matured in stainless steel for 4 months.

The other night, one of the servers was tasting a couple of highly esteemed regulars on the Canet Valette at the bar. Both of these gentlemen are known connoisseurs in Austin’s wine community. After tasting the wine, they were both so excited about it that they bought a bottle for one of their favorite servers from another neighborhood restaurant who happened to be sitting at the other end of the bar. To me, that speaks volumes about how unique and impressive the wine is. All of these people taste a lot of wine regularly, but this one is clearly special enough that they were compelled to share it. Thought that was kind of a cool moment.
