Pork chop and traditional-style Barbera from northern Italy

Recommended wine pairing: Guido Porro single-vineyard “Santa Caterina” Barbera d’Alba 2007, great vintage and great traditional-style producer, beautiful acidity and red berry fruit to match the caramelized flavors of chef Esteban’s pork chop (a pairing perhaps better than sex, well, depending on who the sex is with).
